Apple Gorgonzola and Walnut Arugula Salad

Light, refreshing, crunchy and fall forward are ways that we would describe this Apple and Arugula Salad with Gorgonzola cheese, toasty walnuts and a zingy but sweet apple cider-based dressing.

Pumpkin-spice has arrived even though it is still ghastly hot outside, which means only one thing. The world wants fall to be here but we have to hold on a little longer. Gorgonzola and apples are one of those flavor pairings that transitions you from summer to fall like a good knit sweater. You can’t quite put on a turtleneck yet, but you can pretend like it’s time. Just crank up the A/C a little.

If you are a salad lover like us, then you will be happy to welcome autumn flavors in with this salad. For Texas folks like ourselves, the warm weather is still calling for some simple and oven-free recipes. But pair this salad up with a butternut squash soup or pasta with squash sauce for a REAL fall extravaganza. Not going to lie, I (Hailey) licked the dressing out of the bowl when the salad was gone the other night. It’s just a confession I felt I needed to make. Because it was so good. The tang from two different acids (lemon and ACV) along with the sweetness from the Apple Cider was just perfection!

Apple Gorgonzola and Walnut Arugula Salad

This light, refreshing, crunchy and fall forward Apple and Arugula Salad with Gorgonzola cheese, toasty walnuts and a zingy but sweet apple cider-based dressing is a delicious entree with grilled chicken or as a side salad to your favorite fall entree.

Cinnamon Brown Sugar Sweet Potato Fries with Yogurt Dipping Sauce

Ingredients:
  • 5 oz package of Fresh Arugula or Baby Arugula
  • 1/2 Honeycrisp Apple, Sliced
  • 2 TBSP Dried Cranberries
  • 2 oz or 1/8 C Crumbled Gorgonzola Cheese
  • 1/4 C Toasted Walnuts, Roughly Chopped
  • 1/8 C Apple Juice or Cider (We love Honeycrisp Apple Cider from Trader Joe's!)
  • 1/2 Lemon, Juiced or 1 TBSP Lemon Juice
  • 1 TBSP Apple Cider Vinegar
  • 1 TBSP Dijon Mustard
  • 1/4 C Good Olive Oil
  • 1/4 C Toasted Walnuts, Roughly Chopped
  • 2 tsp fine Sea Salt

Instructions:
  1. In a bowl, whisk together the Apple Juice/Cider, Lemon Juice, Vinegar, Dijon, Salt and Olive Oil to create the dressing. Set aside.
  2. Wash the Arugula (unless yours comes pre-washed!) and place in a large serving bowl.
  3. Distribute the toppings (Apple slices, Gorgonzola, Walnuts and Cranberries) evenly throughout the salad and toss to mix.
  4. Dress the salad a few minutes before serving to keep the arugula crisp.
  5. Enjoy!
